For the Chicken
* 1 whole chicken (1.8–2 kg)
* 2 tbsp olive oil or melted butter
* 4 garlic cloves, minced

* Salt and freshly ground black pepper
For the Herb Stuffing
* 2 cups fresh breadcrumbs
* 2 tbsp butter
* 1 small onion, finely chopped
* 2 garlic cloves, minced

* 1 egg
* Salt and pepper
For the Roasted Potatoes
* 700 g baby potatoes, halved
* 2 tbsp olive oil
* Salt, black pepper & rosemary
For the Gravy
* Pan drippings
* 1 tbsp flour
* 1½ cups chicken stock

1️⃣ Prepare the herb stuffing by sautéing the onion and garlic in butter until soft. Mix with breadcrumbs, herbs, egg, salt, and pepper.
2️⃣ Fill the chicken cavity with the stuffing and tie the legs together. Rub the chicken with olive oil, garlic, herbs, paprika, salt, and pepper.
3️⃣ Arrange the seasoned potatoes around the chicken and roast in a preheated oven at 190°C (375°F) for 1 hour 30 minutes, or until the skin is deeply golden and the internal temperature reaches 75°C (165°F).
4️⃣ Let the chicken rest for 15 minutes before carving.
5️⃣ Prepare the gravy by whisking flour into the pan drippings, then gradually add chicken stock and simmer until smooth and rich.
