🍗 Crispy Grilled Chicken with BBQ Skewers & Garlic Rice


A Complete Filipino-Style Feast with Halo-Halo Dessert

🛒 Ingredients


For the Grilled Chicken


* 1 whole chicken, halved

* 3 tbsp soy sauce

* 2 tbsp oyster sauce

* 2 tbsp brown sugar

* 2 tbsp calamansi or lemon juice

* 4 garlic cloves, minced

* 1 tsp black pepper

* 1 tbsp vegetable oil


For the BBQ Skewers


* 500 g chicken or pork cubes

* BBQ marinade of choice

* Wooden skewers


Garlic Rice


* 3 cups cooked rice

* 4 garlic cloves, minced

* 2 tbsp butter or oil

* Salt to taste


To Serve


* Pancit noodles

* Lumpia (spring rolls)

* Boiled eggs

* Calamansi or lime

* Chili soy dipping sauce


Halo-Halo Dessert


* Crushed ice

* Sweetened beans

* Jackfruit

* Coconut jelly

* Nata de coco

* Sweet corn

* Leche flan

* Ube ice cream

* Evaporated milk


👨‍🍳 Instructions


1. Marinate the chicken for at least 4 hours (overnight for best flavor), then grill over medium heat until fully cooked and beautifully caramelized.

2. Grill the BBQ skewers until lightly charred while brushing with extra marinade.

3. Sauté garlic until golden, add the rice, season lightly, and stir-fry until fragrant.

4. Cook or prepare the pancit noodles and fry the lumpia until crispy.

5. Assemble the platter with grilled chicken, BBQ skewers, garlic rice, noodles, lumpia, boiled eggs, and dipping sauces.

6. Finish the meal with a chilled Halo-Halo layered with crushed ice, sweet toppings, leche flan, ube ice cream, and a splash of evaporated milk.
