🛒 Ingredients


For the Tofu Scramble


* 400 g firm tofu, crumbled

* 1 tbsp olive oil

* ½ tsp smoked paprika

* ½ tsp cumin

* Salt and black pepper to taste

* 2 cups fresh spinach

* 2 tbsp nutritional yeast (optional)


For the Burritos


* 4 large flour tortillas

* 1 ripe avocado, sliced

* ½ cup fresh salsa

* Fresh cilantro (optional)

* Hot sauce (optional)



👨‍🍳 Instructions


1. Heat the olive oil in a skillet over medium heat. Add the crumbled tofu, turmeric, garlic powder, paprika, cumin, salt, and pepper. Cook for 6–8 minutes, stirring occasionally.

2. Stir in the spinach and cook until wilted. Add nutritional yeast for an extra cheesy flavor, if desired.

3. Warm the tortillas until soft and flexible.

4. Fill each tortilla with the tofu scramble, avocado slices, salsa, and fresh cilantro.

5. Fold in the sides, roll tightly into burritos, and toast in a dry skillet for 2–3 minutes per side until lightly golden and crisp.
