* 1.5 kg lamb shoulder, cut into large chunks

* 2 tbsp olive oil

* 12 baby onions or pearl onions

* 2 parsnips, cut into wedges

* 2 carrots, cut into chunks

* 3 garlic cloves, crushed

* 250 ml dry white wine

* 125 ml dry vermouth

* 500 ml lamb or beef stock

* 2 bay leaves

* 2 sprigs fresh rosemary

* 6 fresh sage leaves

* 1 tbsp plain flour

* Salt and black pepper, to taste


To Serve


* Creamy mashed potatoes

* Extra sage leaves, crispy and fried

* Freshly ground black pepper



👨‍🍳 Instructions


1️⃣ Preheat the oven to 160°C (320°F).


2️⃣ Season the lamb generously with salt and pepper.


3️⃣ Heat the olive oil in a large Dutch oven or casserole dish and brown the lamb on all sides. Remove and set aside.


4️⃣ In the same pot, cook the onions, parsnips, and carrots until lightly golden.


5️⃣ Add the garlic and flour, stirring for 1 minute.


6️⃣ Pour in the white wine and vermouth, scraping up any browned bits from the bottom of the pot.


7️⃣ Add the stock, bay leaves, rosemary, and sage. Stir well.


8️⃣ Return the lamb to the pot, cover, and transfer to the oven.


9️⃣ Cook for approximately 2½ hours, or until the lamb is fork-tender and the sauce is rich and reduced.
