* ½ cup icing sugar (powdered sugar)

* 2 cups plain flour

* ¼ cup cornflour (cornstarch)

* 2 tbsp caster sugar, for sprinkling



👨‍🍳 Instructions


1️⃣ In a large bowl, beat the butter and icing sugar until light and creamy.


2️⃣ Add the vanilla extract and mix until combined.


3️⃣ Gradually add the flour and cornflour, mixing until a soft dough forms.


4️⃣ Shape the dough into a disc, wrap in plastic wrap, and chill for 30 minutes.


5️⃣ Preheat the oven to 170°C (340°F) and line a baking tray with parchment paper.


6️⃣ Roll out the dough to about 5 mm thickness and cut into rounds using a cookie cutter.


7️⃣ Place the cookies on the prepared tray and sprinkle lightly with caster sugar.


8️⃣ Bake for 12–15 minutes or until the edges are lightly golden.


9️⃣ Allow the cookies to cool on the tray for a few minutes before transferring to a wire rack.
