🍛🥥 Chicken & Pea Curry with Coconut Cream

Garnish


* Roasted cashews, roughly chopped

* Fresh parsley or cilantro, chopped

* 2 tbsp Greek yogurt or sour cream (optional)



👨‍🍳 Instructions


1️⃣ Brown the Chicken


Heat the oil in a deep skillet or large pan over medium-high heat.


Add the chicken cubes and cook for about 5 minutes until lightly golden on the outside.


Transfer the chicken to a plate and set aside.



2️⃣ Prepare the Curry Base


Using the same pan, cook the onion until soft and translucent.


Add the garlic and ginger and sauté for 1 minute until fragrant.


Stir in the curry powder, turmeric, cumin, and paprika. Cook for 30 seconds to release their aromas.



3️⃣ Make the Sauce


Pour in the chicken stock and coconut cream.
