* 1 whole head of garlic, halved


For the Greek Marinade


* 4 tbsp olive oil

* Juice of 2 lemons

* Zest of 2 lemons

* 2 tsp dried oregano

* 1 tsp dried thyme

* 1 tsp paprika

* 1 tsp salt

* ½ tsp black pepper


For Serving


* Crumbled feta cheese

* Fresh parsley or mint

* Mixed green salad



👨‍🍳 Instructions


1️⃣ Prepare the Marinade


In a small bowl, whisk together the olive oil, lemon juice, lemon zest, oregano, thyme, paprika, salt, and black pepper until well combined.



2️⃣ Assemble the Tray


Arrange the potatoes, red onions, and garlic in the bottom of a large baking dish.


Place the chicken pieces on top of the vegetables.


Scatter the cherry tomatoes and olives around the chicken.


Pour the marinade evenly over everything, making sure the chicken is well coated.



3️⃣ Bake


Preheat the oven to 200°C (400°F).


Bake for 45 minutes.


Remove the tray, gently turn the potatoes and vegetables, then return to the oven for another 10–15 minutes until the chicken is golden brown and crispy.



4️⃣ Finish & Serve


Allow the tray bake to rest for 5 minutes.


Sprinkle with crumbled feta cheese.


Garnish with fresh parsley or mint before serving.
