* 1 red bell pepper, diced

* 1½ teaspoons ground coriander

* 1 teaspoon ground cinnamon

* ¼ teaspoon ground cardamom

* ¼ teaspoon cayenne pepper (adjust to taste)

* ½ teaspoon salt

* ½ teaspoon black pepper

* 2 medium sweet potatoes, peeled and cubed

* 1 can (400 g / 14 oz) chickpeas, drained and rinsed

* 1 can (400 g / 14 oz) fire-roasted tomatoes

* ¾ cup roasted unsalted peanuts, roughly chopped

* 1 serrano pepper, finely diced

* 3½–4 cups vegetable stock

* ¾ cup natural creamy peanut butter

* 2 tablespoons tomato paste

* 4–5 cups collard greens or kale, chopped

* 2 tablespoons fresh lemon juice


For Garnish


* Fresh cilantro leaves

* Chopped peanuts

* Extra lemon wedges

* Sriracha sauce (optional)



👨‍🍳 Instructions


Step 1: Sauté the Aromatics


Heat olive oil in a large Dutch oven or soup pot over medium heat.


Add the diced onion and bell pepper and cook for 5 minutes until softened.


Stir in garlic and ginger and cook for 1 minute until fragrant.



Step 2: Add the Spices


Add cumin, coriander, cinnamon, cardamom, cayenne, salt, and black pepper.


Cook for 30 seconds while stirring to release the flavors of the spices.



Step 3: Build the Stew


Add:


* Sweet potatoes

* Chickpeas

* Fire-roasted tomatoes

* Serrano pepper

* Tomato paste

* Chopped peanuts


Pour in the vegetable stock and stir well.


Bring the mixture to a gentle boil.



Step 4: Add the Peanut Butter


Reduce heat to medium-low.


Whisk the peanut butter into the stew until completely dissolved and smooth.


Allow the stew to simmer uncovered for 25–30 minutes, stirring occasionally.


The sweet potatoes should become tender and the broth rich and creamy.



Step 5: Finish with Greens


Add the chopped collard greens or kale.


Cook for another 5 minutes until wilted and tender.


Stir in the fresh lemon juice and adjust seasoning if necessary.
