This Pitaya & Black Goji Berry Cheesecake combines a crunchy nut-and-date crust with a silky cashew filling infused with exotic pitaya and antioxidant-rich black goji berries. Beautifully layered and bursting with natural color, it’s the perfect healthy dessert for any special occasion.


🛒 Ingredients


For the Crust


* 1 cup almonds

* 1 cup cashews

* ½ cup pitted dates

* 2 tbsp coconut oil

* Pinch of salt


For the Filling


* 2 cups cashews, soaked overnight

* 1 cup coconut cream

* ½ cup maple syrup

* ½ cup pitaya (dragon fruit) purée

* 2 tbsp fresh lemon juice

* 1 tsp vanilla extract

* ¼ cup black goji berries, soaked in ¼ cup water


For Garnish


* Fresh pitaya slices

* Mixed fresh berries

* Edible flowers (optional)


👨‍🍳 Instructions


1. Blend the crust ingredients until sticky, then press firmly into a 7-inch springform pan. Freeze while preparing the filling.

2. Blend the soaked cashews, coconut cream, maple syrup, pitaya purée, lemon juice, and vanilla until perfectly smooth.

3. Divide the mixture into two bowls. Blend the soaked black goji berries with their soaking water into one portion.

4. Pour the pitaya layer over the crust, then gently add the black goji layer. Swirl lightly for a beautiful marbled effect.

5. Freeze for 4–6 hours until firm. Let the cheesecake sit at room temperature for 15–20 minutes before slicing.

6. Decorate with fresh berries, pitaya slices, and edible flowers before serving.


👨‍🍳 Chef’s Tip


For an ultra-creamy texture, blend the filling for at least 3–4 minutes until completely smooth. A drizzle of berry coulis or a sprinkle of freeze-dried berries makes the presentation even more elegant.
