2 medium zucchini, grated

¼ teaspoon salt (adjust to taste)


2 tablespoons fresh parsley, finely chopped (optional)


Instructions


1. Prepare the Zucchini


Grate the zucchini using the coarse side of a box grater.


Place the grated zucchini in a clean kitchen towel and squeeze out as much moisture as possible. This step is essential for achieving a crispy texture.


2. Make the Mixture


In a large mixing bowl, combine the zucchini, garlic, Parmesan cheese, breadcrumbs, egg, Italian seasoning, salt, pepper, and parsley.


Mix well until all ingredients are evenly incorporated and the mixture holds together when pressed.


3. Shape the Bites


Preheat the oven to 200°C (400°F).


Line a baking tray with parchment paper or lightly grease it.
