🍄 Creamy Parmesan Mushroom Risotto

👨‍🍳 Instructions


1️⃣ Prepare the Mushrooms


Heat 1 tablespoon of olive oil in a large skillet.


Add the sliced mushrooms and cook until golden brown.


Season with salt and pepper, then set aside.



2️⃣ Make the Risotto Base


In a large saucepan, melt the butter with the remaining olive oil.


Add the onion and sauté until translucent.


Stir in the garlic and cook for 1 minute.


Add the Arborio rice and stir for 2 minutes until lightly toasted and glossy.



3️⃣ Cook the Risotto


Add one ladle of hot stock and stir continuously.


Once the liquid is absorbed, add another ladle of stock.


Repeat this process for 20–25 minutes until the rice is tender and creamy.



4️⃣ Add the Mushrooms and Cheese


Return the cooked mushrooms to the pan.


Stir in the Parmesan cheese and cream, if using.


Mix well until smooth, rich, and creamy.



5️⃣ Serve


Serve immediately while hot.


Garnish with extra Parmesan cheese, fresh thyme, and a sprinkle of black pepper.
