Ingredients
For the Pasta
* 2 salmon fillets, cut into bite-sized chunks
* 8 oz (225 g) fettuccine pasta
* 2 tablespoons olive oil
* 2 tablespoons unsalted butter
* 4 cloves garlic, minced
* 1 small onion, finely chopped
* 1 cup heavy cream
* 1/2 cup grated Parmesan cheese
* 1/2 teaspoon paprika
* 1/2 teaspoon Italian seasoning
* Salt and black pepper, to taste
* 1 tablespoon lemon juice
* Fresh parsley, chopped, for garnish
Instructions
1. Cook the Pasta
Bring a large pot of salted water to a boil. Cook the fettuccine according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.
2. Cook the Salmon
Season the salmon chunks with salt, pepper, and paprika. Heat the olive oil in a large skillet over medium-high heat. Add the salmon and cook for 3–4 minutes per side until golden and cooked through. Remove from the skillet and set aside.
3. Prepare the Garlic Butter Sauce
In the same skillet, melt the butter and sauté the onion until soft. Add the minced garlic and cook for about 1 minute until fragrant.
4. Make the Creamy Sauce
Pour in the heavy cream and stir well. Add the Parmesan cheese and Italian seasoning. Simmer gently for 3–5 minutes until the sauce thickens. Stir in the lemon juice for a fresh burst of flavor.
5. Combine Everything
Add the cooked pasta to the sauce and toss until evenly coated. If needed, add a little reserved pasta water to achieve the desired consistency. Gently fold in the cooked salmon.
6. Serve
Garnish with freshly chopped parsley and extra Parmesan cheese. Serve immediately while hot and creamy.
