These Chicken, Zucchini & Sweet Corn Burgers are the perfect combination of juicy ground chicken, fresh vegetables, and aromatic herbs. Crispy on the outside, tender on the inside, they’re an easy, protein-packed meal that’s perfect for busy weeknights.
🛒 Ingredients
* 500 g (1 lb) ground chicken
* 1 medium zucchini, grated and squeezed dry
* Kernels from 1 fresh corn cob
* ½ red bell pepper, finely diced
* 3 green onions, sliced
* 1 egg
* ½ cup panko breadcrumbs
* 2 tbsp chopped cilantro
* 3 garlic cloves, minced
* 1 tsp ground cumin
* 1 tsp ground coriander
* Salt & black pepper to taste
* 3 tbsp olive oil
👨🍳 Instructions
1. In a large bowl, combine all the ingredients and mix gently until just combined.
2. Shape the mixture into burger patties.
3. Heat olive oil in a skillet over medium heat and sear the patties for 2–3 minutes per side until golden brown.
4. Transfer to a preheated oven at 220°C (425°F) and bake for 7–10 minutes, or until fully cooked.
5. Serve with a refreshing Greek yogurt sauce, fresh tomato-cucumber salad, or warm tortillas.

Squeeze the grated zucchini well before mixing to keep the burgers firm and juicy. A squeeze of fresh lemon juice before serving enhances all the flavors.
