* ½ cup vegetable oil

* 2 large eggs

* 1 tbsp white vinegar

* 2 tbsp blue gel food coloring

* 8 oz (226 g) cream cheese, softened

* ½ cup (115 g) unsalted butter, softened

* 3½ cups powdered sugar

* 1 tsp vanilla extract

* Pinch of salt

1️⃣ Preheat the oven to 350°F (175°C) and prepare three 8-inch cake pans.


2️⃣ In one bowl, whisk together all the dry ingredients. In another bowl, beat the wet ingredients until well combined.


3️⃣ Gradually combine the wet and dry mixtures, stirring just until smooth. Do not overmix.


4️⃣ Divide the batter evenly among the prepared pans and bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.


5️⃣ Let the cakes cool completely before frosting.


6️⃣ Beat the cream cheese and butter until creamy, then add the powdered sugar, vanilla, and salt. Whip until light and fluffy.
