🛒 Ingredients


* 340 g (12 oz) pasta (rigatoni, penne, or spaghetti)

* 2 tbsp extra virgin olive oil

* 4 garlic cloves, minced

* 3 cups fresh tomatoes, diced

* ½ tsp dried oregano

* Salt & black pepper to taste

* 1 cup ricotta cheese

* Fresh basil, chopped

* ¼ cup grated Parmesan cheese (optional)


👨‍🍳 Instructions


1. Cook the pasta until al dente, then drain, reserving a little pasta water.

2. Heat the olive oil in a large skillet and sauté the garlic until fragrant.

3. Add the tomatoes, oregano, salt, and pepper. Simmer for 5–7 minutes until the tomatoes soften into a light sauce.

4. Toss in the cooked pasta, adding a splash of reserved pasta water if needed.

5. Remove from the heat and gently fold in the ricotta until creamy.

6. Finish with fresh basil and a generous sprinkle of Parmesan before serving.
