This One-Pot Meatball Pasta is the perfect weeknight meal—juicy meatballs, tender pasta, and a rich tomato sauce, all cooked together in one pot. Ready in just 30 minutes with minimal cleanup.
🛒 Ingredients
For the Pasta
* 500 g rigatoni or penne pasta
* 400 g mini beef or Italian meatballs
* 1 onion, diced
* 3 garlic cloves, minced
* 2 tbsp olive oil
* 400 g cherry tomatoes
* 700 ml tomato passata or pasta sauce
* 2 cups beef or chicken broth
* 1 tsp Italian seasoning
* Salt & black pepper
For Garnish
* Fresh parsley, chopped
* Grated Parmesan cheese
* Fresh basil (optional)
👨🍳 Instructions
1. Heat olive oil in a large pot and sauté the onion and garlic until fragrant.
2. Add the meatballs and cook until lightly browned.
3. Stir in the cherry tomatoes, tomato sauce, broth, Italian seasoning, salt, and pepper.
4. Add the uncooked pasta, stir well, cover, and simmer for 15–18 minutes, stirring occasionally until the pasta is tender.
5. Sprinkle generously with Parmesan cheese and fresh parsley before serving.

For an extra creamy finish, stir in ½ cup heavy cream or a handful of mozzarella during the last 2 minutes of cooking.
