* 1 tsp garam masala

* ½ tsp paprika

* 1 can (400g) chickpeas, drained and rinsed

* 400ml coconut milk

* 2 tbsp tomato paste

* Salt and black pepper to taste


For Garnish


* Fresh cilantro, chopped

* Lime wedges

* Basmati rice or naan bread for serving



👨‍🍳 Instructions


1️⃣ Heat the oil in a large skillet and cook the eggplant slices until golden brown on both sides. Remove and set aside.


2️⃣ In the same skillet, sauté the onion until softened. Add the garlic and ginger and cook for 1 minute.


3️⃣ Stir in the cumin, turmeric, garam masala, and paprika. Cook until fragrant.


4️⃣ Add the tomato paste and coconut milk, stirring until smooth and combined.


5️⃣ Add the chickpeas and simmer gently for 10 minutes.


6️⃣ Return the eggplant to the skillet and cook for another 5 minutes so the flavors meld together.


7️⃣ Season with salt and pepper to taste.


8️⃣ Garnish with fresh cilantro and lime wedges. Serve with basmati rice or warm naan bread.
